My name is George Samir Rafek I’m 28 years-old I got my baccalaureate certificate while I was serving in the military service we were allowed to have one-month break, so I came to Idleb and did my exams by then we were living in Idleb, everything was good…life was good I used to work in a liquor shop in Idleb, I wasn’t even sixteen yet, so that was my main work By the age of 16, I didn’t want to stay in Idleb,
I wanted to see new things… I went to latakia to work in the seaport I lived there for 9 years including the time of my service which was 5 years and 7 months When armed groups entered Idleb city, my family couldn’t stay there anymore…
I was still serving, and they couldn’t bear to stay there I used to call them from my mobile constantly to check up on them
One time all communication was lost for 4 straight days… so I had a nervous breakdown I had always told them that they should get out of there… and because we had a house for my sister in Aleppo, they finally
left Idleb and came to stay here. after my treatment I was overwhelmed with all the medicines …
I just wanted for that part to be over… I reached a point where I was taking medication for each simple
daily task like eating and sleeping, even my body was exhausted then on new years’ eve I decided to stop the pills, and I took the
decision to get my life back, I wanted to work again and I did, I took two and sometimes three jobs to keep myself busy After my project was accepted my parents and I rented a house and moved in together it was a place to live in and a workshop at the same time for so long I wanted to have my own factory… because the work I was giving in my job before was as the same quality as a factory I had already worked in a factory for a year, When I learned for sure that my project was approved,
I started asking about the equipment prices…I was afraid from the difference in the prices I couldn’t buy all new tools with the budget,
I purchased a new oven which was the most important piece and the rest were second hand pieces like the trays, the oven,
the mixers, table and the refrigerator I Bake a variety of biscuits with different textures and stuffing,
Barazeq (a local Syrian biscuit) and cakes I currently work alone, my parents help me sometimes I often prefer to work at night because the electricity is better in the evenings,
I prepare the doughs in the morning and let them rest and become cold enough then later, the baking process starts at night I thought about opening a pastry shop but I don’t have enough resources now Thank you, Caritas Poland, during these very hard
situations that we are living in we can only provide our living day by day but we can’t even think about opening a project that we would live from a decent way of life.
